I realize I'm not going to win an award for food photography with this one, but this pizza is worth talking about. I'm not even sure how this pizza came to be at my house but I do know this is the one thing we make most often because it is ALWAYS excellent, it's easy to make and, oh yeah, my husband knows how to make it. Which, let's be honest, is also always excellent.
So this has me thinking. Could making dinner be the new bouqet of flowers? Could the simple line 'baby, here's a glass of wine. Go sit down on the couch and I'll make a pizza' be the new love note? Could cleaning the shower (excited gasp!) be the new weekend in Napa? I'm getting carred away, but you get my point.
tomato basil pizza:
1 pizza dough: here is a simple recipe (I won't blame you if you never come back to my blog after clicking over to her's) or buy the one from Trader Joe's.
1 ball fresh mozzarella, sliced
couple ounces goat cheese
1 clove garlic, minced (or more if you want)
1 cup fresh cherry tomatoes chopped in half
couple tablespoons fresh basil, chopped.
2 shallots sliced thin

Preheat oven to 425. In a small skillet on low heat saute shallots in a teaspoon of olive oil until brown, about 15 min. Roll out the pizza dough and place on sheet pan or pizza stone. In a small bowl combine olive oil (enough to lightly coat the entire dough) garlic, salt and pepper. Brush mixture over dough. Place motz slices, goat cheese dollops and caramelized shallots evenly on pizza dough. Cook for about 12 min or until brown and a little bubbly. Take pizza out of the oven and immediately sprinkle with fresh tomatoes and basil.
