Somehow I feel the need to confess that I have been eating these things by the truck-load. Trader Joe's makes a mean frozen fish stick and lately I've been singing their praises to anyone who will listen. Especially those people who are pinched for time (or get cranky) around 5 or 6pm and need a plan. And they need a plan quick.
For whatever reason, when faced with this challenge in my own kitchen, I tend to rise to the occasion. Something inside me refuses to let the "it's the end of the day and I want to sit in the corner with a cocktail and eat cheese by myself" feeling win. Something inside me is so determined to make a good-tasting dinner (as opposed to eating a bowl of cereal and calling it a night)that I have been known to pack up the family and drive to the store at 7:20 to buy a piece of ginger root for the recipe I saw on the Internet 20 min earlier THAT I HAVE TO MAKE.
I know, it's weird. If only this level of intensity would transfer over to other areas of life like cleaning my kitchen or using moisturizer under my eyes before bed. Man, maybe I did need to confess some things. I hate crafts. And I also don't think Will Ferrell is that funny.
Frozen fish sticks cooked in the oven until crispy
Trader Joe's tarter sauce (I could dedicate an entire post about how good this stuff is)
bag of coleslaw or cabbage
lime or lemon juice
Here's what you do: heat up your tortilla, put a couple fish sticks on it and then scoop a couple spoonfuls over that of the cabbage you've mixed with the tarter sauce and lemon juice. Serve with extra sauce.
