Want to be horrified surprised by how fast you can eat an entire can of garbanzo beans by.your.self.? Try this. And I know, garbanzo beans probably aren't at the tipity top of the list of foods you crave, but I swear, this is that good.
I think I originally got this recipe from her, my friend in Seattle (except she doesn't know we're friends.) It's light and fresh and easy and highlights some of my favorite tastes: parmesan cheese, salt and lemon. For me this recipe is all about the quality of your ingredients, so keep that in mind. I have used canned beans every time but I do try and bust out some good cheese, some decent olive oil and my more expensive salt. You can eat it with a fork. Or with a chip or cracker like a dip. It kind of reminds me hummus but with a great chunky texture. And it only takes about 12 seconds to make. It won't win for "prettiest" dish at your Super Bowl party, but is that really what we're after?
Here's what you do:
Take a can a garbanzo beans and drain and rinse. Add a couple good glugs of olive oil, the squeeze of about a half a lemon, some good quality grated parmesan cheese, salt and pepper. Mix. Then just adjust the taste to your liking. I usually add more cheese. But that's how I am.
